Easy one-handed snack that's protein-rich and nutrient-dense. Perfect for eating while holding a baby.

Ingredients

  • *3 tortillas Whole wheat tortillas
  • *4 oz Cream cheese
  • *0.5 cup Shredded mozzarella
  • *2 cups Fresh spinach
  • *1 lb Deli turkey (sliced)
  • *1 medium Red bell pepper (diced)
  • *0.5 teaspoon Garlic powder
  • *0.25 teaspoon Salt and pepper

Instructions

  1. 1In a small bowl, combine softened cream cheese, mozzarella, garlic powder, salt, and pepper.
  2. 2Lightly chop fresh spinach and add to the cream cheese mixture. Mix well.
  3. 3Lay out one tortilla on a flat surface.
  4. 4Spread about 1/4 of the spinach-cream cheese mixture evenly on the tortilla.
  5. 5Layer 4-5 slices of turkey on top of the spread.
  6. 6Sprinkle diced red bell pepper over the turkey.
  7. 7Roll the tortilla tightly from one end, pressing gently as you go.
  8. 8Repeat with remaining tortillas.
  9. 9Wrap each roll tightly in plastic wrap.
  10. 10Slice each roll into 1-inch pinwheels.

How to Freeze

Wrap rolls in plastic wrap, then place in a freezer-safe container or bag. Freeze for up to 3 weeks.

Reheating Instructions

Thaw at room temperature for 10-15 minutes before eating. No reheating necessary. Can be eaten cold directly from the fridge.
