Ingredients

  • *1.5 cups All-purpose flour
  • *0.33 cup Cocoa powder
  • *0.33 cup Vanilla protein powder
  • *2 teaspoons Baking powder
  • *0.5 teaspoon Baking soda
  • *0.25 teaspoon Salt
  • *2 eggs Large eggs
  • *1 cup Greek yogurt
  • *0.25 cup Honey
  • *2 tablespoons Vegetable oil
  • *1 teaspoon Vanilla extract
  • *0.5 cup Dark chocolate chips

Instructions

  1. 1Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. 2In a large bowl, whisk together flour, cocoa powder, protein powder, baking powder, baking soda, and salt.
  3. 3In another bowl, whisk together eggs, Greek yogurt, honey, oil, and vanilla extract until smooth.
  4. 4Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. 5Fold in chocolate chips gently.
  6. 6Divide batter evenly among 12 muffin cups.
  7. 7Bake for 20-22 minutes until a toothpick inserted comes out clean.
  8. 8Cool in the pan for 5 minutes before removing to a wire rack.

How to Freeze

Cool completely, then place in freezer-safe containers or zip-top bags, separating layers with parchment paper. Freeze for up to 2 months.

Reheating Instructions

Microwave a frozen muffin for 45-60 seconds until warmed through. Or thaw overnight and enjoy at room temperature.
