Hearty breakfast burritos packed with eggs, cheese, and vegetables. Perfect for grab-and-go mornings when you're short on time.

Ingredients

  • *8 tortillas Flour tortillas
  • *12 eggs Large eggs
  • *2 cups Shredded cheddar cheese
  • *2 medium Bell peppers (diced)
  • *1 medium Onion (diced)
  • *2 cups Spinach (fresh)
  • *1 lb Ground sausage
  • *2 tablespoons Butter
  • *1 teaspoon Salt and pepper

Instructions

  1. 1Brown the sausage in a large skillet over medium-high heat, breaking it apart as it cooks. Remove and set aside.
  2. 2In the same skillet, melt butter and sauté diced onions and bell peppers until softened, about 5 minutes.
  3. 3Add fresh spinach and cook until wilted, about 2 minutes.
  4. 4In a large bowl, whisk together eggs with salt and pepper.
  5. 5Return sausage to the skillet with vegetables. Pour whisked eggs over the mixture and scramble gently until cooked through, about 8-10 minutes.
  6. 6Divide the egg mixture evenly among the 8 tortillas. Top each with 1/4 cup shredded cheese.
  7. 7Roll each tortilla tightly, tucking in the sides as you go.
  8. 8Wrap each burrito individually in plastic wrap and then in foil.

Wrap each burrito tightly in plastic wrap, then in foil. Label with the date. Freeze for up to 3 months.

Reheating Instructions

Unwrap the burrito (remove plastic and foil), wrap in a damp paper towel, and microwave for 2-3 minutes until heated through. Alternatively, thaw overnight in the refrigerator and reheat in a skillet for 3-4 minutes.
